Lasagna

Hmm, supper.

So, after some thinking about what I want this blog to be, I thought I will share some cooking with you as well. I think I am not doing as nearly as much cooking as I do baking, or maybe it just seems to me like that. Thus I thought this would be a mere baking blog. But, I do some nice cooking as well, my husband at least has not fallen off the chair yet. As a result I will share some of my cooking “recipes”.

White Buns

Goes well with Nutella.

This is another recipe from my time in the Bistro. Those buns were made to go with Chili con Carne and honestly, they do very well. However, if you need some buns for any occasion, these are the go to ones. They are fairly simple to make I find if you are ok with yeast dough. I know my mother doesn’t like that type of dough and I believe neither does my grandmothers. There is always the chance of killing the yeast, which can happen quickly. I am not saying that I am an expert with this, I had some accidents myself already. Practice is the key word, as always.

Lemon Buttermilk Cupcakes with Lemon Cream

Do you see the lemon goodness?

I love it when I have an occasion to make something. Like those Lemon Buttermilk cupcakes, which I made for a teacher’s conference. Why lemons? Well, that’s what I had left over from a while ago and I finally wanted to use them. There was also some buttermilk and voilá, you have instant goodness. Although, decorating them was not so instant.

Chocolate Muffins

Simple but good

I used a basic muffin recipe from my German “Kleine Muffins ganz groß” (small muffins quite great). Because it comes from a German book I will put this under German baking. The recipe is originally for a white muffin I simply added some cocoa powder. The reason for making these little ones: I teach at Toddlers Sunday group. Muffins always work for those little ones and chocolate helps a little more.

Hazelnut Chocolate Cupcakes with Cream Cheese Icing

Hazelnut and Chocolate goodness

I was looking for a quick recipe for some cupcakes that I wanted to bring to a teachers’ meeting. So I looked into my “125 best Cupcake recipes” by Julie Hasson. A lot of those recipes are with buttermilk and I had none at home. (Note to self: always have some buttermilk in your fridge.) However, Hazelnut Chocolate Cupcakes were buttermilk free and I had the necessary ingredients: fluffy, fluffy and more fluffiness.

Cake, cherries, butter creme and chocolate equals yummy.

Another one of those family recipes, this time from my aunt. Although I am fairly certain she got it from grandma. Yes, my grandmother is a walking baking (and cook) book.

Strawberry Torte

Great dessert for summer afternoons

Summer means strawberries and strawberries mean either eat them as you pick them or make a torte. This is a personal favourite of mine and I associate this torte with family get-togethers and fun.  It is easy to make and really light, in my opinion. Using fresh strawberries for this recipe is almost a must.

German Pancakes

Eierkuchen – German Pancakes

This is without doubt one of my favourites and probably 90% of German children love this food. It is not so much something that was baked in the oven but in a pan. German pancakes, which are similar to French Crépes but not as thin. There are many variations to pancakes, this is only one version.

Easter Lamb

German Easter Lamb

The Easter Lamb is a family tradition back home, I guess not just with my family but with many German families.

Banana Bread

This is a husband favourite. He was also the one who provided me with the recipe.

Banana bread:

– 3-4 ripe bananas
– 80g butter
– 200g sugar
– 1 egg
– 1 tsp vanilla
– 1 tsp baking soda
– salt
– 180g flour

Cream butter and sugar and add vanilla. Mash your bananas and add them together with the egg to the butter/sugar mixtures. Sift flour and baking soda together and add to the batter.

Grease your loaf pan, dust it with flour and fill with batter. Bake at 175°C for one hour. You might want to cover the top with foil for the last bit otherwise it might burn. Remove from pan, let cool and dust with icing sugar. I should try chocolate at some point. Chocolate glaze makes things better.
